Carrot Ginger Sandwich

Since I talked about Carrots in the previous post, let’s try a carrot based healthy recipe. This is from one of my favorite blogs, bloomacious.

2 slices whole wheat or multi-grain bread
2 Grated Carrots
Spinach Leaves
Thinly Sliced Cucumber
Tomato Slices
2 tablespoons cream cheese (i used only 1 teaspoon)
2 tablespoons mayonnaise (i used only 1 teaspoon)
1 teaspoon sweet ginger paste
Salt and pepper to taste

Combine cream cheese, mayonnaise, sweet ginger paste in a bowl - spread on both slices of bread. Layer on cucumber, tomato, grated carrot, and spinach - add salt and pepper as desired. If you want a moister version of this combine the grated carrot with the cream cheese, mayonnaise mixture and spread on bread.

Try the grilled version too. I tried it. It’s delicious :) [via]
